So in honor of the Olympics, my cats have decided to have their own events.  This morning they participated in gymnastics and wrestling.  Take a look:

This is Jack.  He’s the skinnier of the two brothers.  But I think he’s the instigator.  I’ll show you why.

That’s Goose.  He’s the fatter of the two.  Pay no attention to his belly wobble.  It’s not like I grab it and shake it when he’s not looking or anything.  This morning, he was hanging out on the porch kinda keeping to himself and rolling around like a crazy cat.  And then Jack had to get his attention.

This is how it started- a white dove flew by.  Being they are such great hunters (they’ve never been outside the borders of our deck), they had to scope it out.

couscous

This is my version of couscous.  I’m sure if you ordered it in a restaurant, it wouldn’t look like this, but we think it’s pretty darn delicious this way.  As soon as we have some fresh veggies from the garden, we make this…and it’s pretty much a staple in our house all summer.  You can prepare with any veggies you have on hand, but I’ll post it the way I usually make it.  Enjoy!  (ps-this takes no time at all to make; it’s great for the work week.)

Vegetable Couscous

  • 1 c. couscous
  • 1 1/2 c. chicken/veggie broth
  • fresh veggies, cut into bite size pieces (zucchini, onions, carrots, squash, bell peppers)
  • 3 cloves of garlic, minced
  • cherry/grape tomatoes
  • hard italian cheese (parmesan lovers-please don’t use the stuff in the green can, you can find a chunk in your local grocery store i’m sure)
  • olive oil
  • fresh herbs (whatever is in the garden; i used mint, basil, chives, parsley and cilantro)

Start by sauteeing your veggies (minus tomatoes) in olive oil and garlic.  Place broth in a separate pot.  Once it has boiled, turn heat off and add couscous.  Cover and let sit for 5 minutes.  Fluff with a fork.  Add cooked veggies, herbs and cheese (careful-the cheese is salty).  Mix and enjoy.  Makes enough for 2 people to take to lunch the next day.

I can’t believe the summer is going to be over so soon!  And I have barely written anything here.  This summer has been incredibly crazy; computer problems seem to be running amuck in our house.  That has been my excuse for not being on here anyway.  The last thing that has happened is that my brand new computer-around 3 weeks old-completely died last week.  And I mean I couldn’t even turn it on.  So now that we are hopefully up and running, I can post some things on a weekly basis at least.  I do have a few recipes I’d like to start posting.  Starting with a spring veggie couscous, but I have to get the pics loaded up first.  I’m getting excited for tomato season, which is my absolute favorite!  With the first ripe tomato, I’ll put up some recipes that involve fresh tomatoes, mozzarella, and lots of pesto.  Thank you dad for the produce!!!! 

In other news, even though I haven’t posted on here that I am pregnant (assuming most of the 3 people that read this know that already!), we found out on friday that we are having a boy.  Well, I could have told you that about 2 weeks ago after my last check up.  My doctor informed me that if I did have another boy, he would most likely be bigger than the first child.  Bigger.  Let me remind you of deuce’s measurements upon arrival:

10 lbs, 2 oz.

22 1/2 ” long

Bigger.

Help me.

okay, so it’s been awhile! I’m sorry. We were so excited to get ready for vacation and then our computer crashed so I really didn’t bother with anything. But at least I can now post about our trip to the beach. It was so relaxing! The weather was great, and we had a wonderful time. To make up for lost time, I have around 200 pics that I took on vacation. Obviously, I’m not putting them all into this post. So take a look around, and I promise this time, it won’t be so long until I get back here.

I just thought I’d mention that Dana will be posting some photos from the beach soon. We’ve had them for some time, but with all the changes I’ve been making to our computers around here, we haven’t put anything up yet.
