What?  Yeah, rhubarb.  Ever heard of it?  It’s good stuff, especially when your dad grows it and gives it to you for free.  Rhubarb is a “vegetable with a unique taste that makes it a favorite in many pies and desserts.”  Exactly.  So I made a pie.  There’s nothing like turning a vegetable into a sweet sugary, high calorie dessert.  So here’s what it looks like:

I made a blueberry rhubarb pie this morning.  And although we haven’t tried it yet, it looks and smells delicious. 

RHUBARB BLUEBERRY PIE

  • 2 c. chopped rhubarb
  • 2 c. fresh or frozen blueberries
  • 1/4 c. flour
  • 3/4 c. sugar
  • 1/2 t. apple pie spice
  • 1/2 t. lemon juice
  • dash of salt
  • 2 refrigerated pie crusts

Combine all ingredients except pie dough and place in 9″ pie shell.  Cover with remaining pie dough.  Make 4 slits in top of the pie.  Brush with egg yolk and water mixture.  Bake in 400 degree oven for 30-40 minutes, or until brown.  During the last 2 minutes of baking, brush pie with a mixture of 2T corn syrup and 1T hot water (this gives it a shine).  Sprinkle with decorative sugar and place back into the oven for last 2 minutes to set the glaze.  Enjoy!

Here’s a question-

What do you do on a nice Sunday afternoon in May around Pittsburgh?  Well, if it’s a few hours before a playoff hockey game, and you’re hungry, you go hunting for morel mushrooms.  That’s exactly what we did.  My mom and I took a hike in an undisclosed location to look for the suckers.

We came up with quite a nice batch to cook. If you’ve never had them, it’s really something you should try.  Considering they go for about $60/pound, you’re better off picking them yourself.

That will give you a general idea of what they look like.  We got just enough to have a good meal of them.

 This is about half of our stash from Sunday.  I got sick of taking pictures. 

Once you get these guys home, the first thing you wanna do is cut them in half and soak them in water.  Unless you’re into eating critters, you don’t want to skip this part.  Once they have sat for awhile (I change the water periodically) they are ready to cook.  Throw them in a skillet with some butter and salt and saute to your liking.

Saturday night was fun!  We celebrated Johnny and Christina’s graduation with a really great dinner at Hyde Park in Pgh.  It was really nice because instead of being out in all the hustle and bustle of the regular restaurant, we were in a private room.  It was great because Deuce could run around as much as he wanted, and nobody was going to yell at us to tame our child.  Deuce was fascinated with the boats passing by on the river, so we took turns looking out the window to find one.

(That’s Deuce and Aunt Emmy.  I think they’re pondering the meaning of life. Or wondering what was taking so long to bring the drinks. It’s not too often we get pop in our house.  Hurry up already with that Coke!)

Somebody told me it was a steakhouse, but I don’t think so.  I had oysters, crab, shrimp and more lobster.  It was great!  Hubby’s steak looked good too, but that’s not really my thing.  I think we closed the place down at 11:30!  I can’t believe we actually stayed out that late.  But it was worth it.  Deuce waited to fall asleep until it was time for the main course.  Lucky for me, I’m such a multitasker I can hold a 40+ pound child and still manage to put down a 10 oz. lobster tail.  It’s a tough job, but someone’s gotta do it.  Grandpa took his turn holding Deuce too, and by the looks of it, I don’t think anyone was going to mess with him.
